Stimulating Spinach Salad
Ingredients
- Salad ⓘ
- 1 bunch fresh spinach, trimmed, clean and dry ⓘ
- 2 stalks celery, sliced thin ⓘ
- 4 radishes, trimmed and sliced thin ⓘ
- 2 avocado, pitted and sliced thin ⓘ
- 1/3 cup sunflower seeds, shelled ⓘ
- Dressing
- 1 teaspoon honey ⓘ
- 1 1/2 tablespoons lemon juice ⓘ
- 1 teaspoon red wine vinegar ⓘ
- 1/4 cup olive oil ⓘ
- 1 pinch salt, to taste ⓘ
- 1 pinch pepper, to taste ⓘ
Instructions
- In a large bowl combine spinach, celery, radish, avocado and seeds.
- In a small mixing bowl combine honey, lemon juice and vinegar.
- Slowly drizzle in oil while whisking to blend and season with salt and pepper to taste.
- Spoon dressing over salad and toss gently to coat evenly.
