Ingredients

  • 1 lb. zucchini, quartered lengthwise and cut into 2 inch strips
  • 2 tsp. salad oil
  • 2 tsp. water
  • 1 onion, thinly sliced
  • 2 Tbsp. soy sauce

Instructions

  1. Spray a large skillet with cooking spray.
  2. Add oil, zucchini, water, and onion in a shallow layer.
  3. Cook over high heat for 5 minutes, stirring occasionally, until water evaporates.
  4. Sprinkle with soy sauce and serve.
