Strawberry Baked Alaska combines creamy strawberry ice cream, sweet jam, and fluffy meringue for a delightful dessert perfect for summer gatherings and special occasions.

Ingredients

  • 1 prebaked 9-inch pie shell
  • 1 1/2 qt. strawberry ice cream
  • 1 c. strawberry jam or sundae topping
  • 3 egg whites
  • dash of cream of tartar
  • fresh strawberries for garnish (optional)

Instructions

  1. Chill the baked pie shell well.
  2. Spread the bottom of the pie shell with strawberry jam or topping, reserving a little to drizzle over the top.
  3. Soften the strawberry ice cream at room temperature.
  4. Beat the ice cream with an electric mixer until smooth and creamy.
  5. Spread the ice cream evenly over the bottom of the pie shell, mounding it in the center.
  6. Place the pie in the freezer immediately while preparing the meringue topping.
