Strawberry Divinity Fudge

Ingredients

  • 2 cups sugar
  • 1/2 cup water
  • 1/4 teaspoon cream of tartar
  • 1 cup preserved strawberries
  • 2 egg whites

Instructions

  1. Boil sugar, water, and cream of tartar until reaching the firm ball stage.
  2. Add drained preserved strawberries to the boiling mixture.
  3. Bring the mixture back to a boil.
  4. Pour the hot mixture slowly, beating constantly, over stiffly beaten egg whites.
  5. Beat until the mixture is thick and fluffy.
  6. Pour into well buttered pans.
  7. Allow to cool and set until firm.
  8. Cut into squares for serving.
