String Bean Ricotta

Instructions
- Heat olive oil in heavy skillet.
- Saute onion, string beans and parsley until onion becomes translucent.
- (You may want to steam beans for about 5 minutes if you like them less crisp.)
- Add tomatoes and sauce, then seasonings and stir.
- Cook over medium heat for 10 minutes.
- Add Ricotta cheese and mix well.
- Cook over low heat for another 10 minutes.
- Pour over brown rice and serve.
