Ingredients

  • 1 1/2 cups self-rising cornmeal
  • 1/2 cup self-rising flour
  • 2 eggs
  • 1 cup buttermilk
  • 1 tablespoon mayonnaise

Instructions

  1. Preheat a skillet with 1 tablespoon of oil in the oven.
  2. Remove the skillet from the oven and add 2 strips of bacon to the bottom.
  3. Pour the cornbread mixture over the bacon in the skillet.
  4. Bake at 400°F for 35 minutes until golden and cooked through.
