Ingredients

  • 6 large peeled potatoes
  • 10 slices crispy cooked bacon
  • 16 oz sour cream
  • 16 oz grated cheese
  • chopped green onions (optional)
  • salt and pepper to taste

Instructions

  1. Boil the potatoes until tender and drain. Place in a casserole dish.
  2. Brown the bacon strips until crisp and chop or crumble.
  3. Blend the cooked potatoes until smooth or desired consistency.
  4. Add the sour cream, grated cheese, chopped green onions (if using), salt, and pepper to the potatoes and mix well.
  5. Mix in the crumbled bacon.
  6. Top with remaining cheese.
  7. Bake at 350°F (175°C) until the cheese is melted, about 15 minutes, or microwave until cheese melts.
