Ingredients

  • 2 cleaned peppers
  • 1/4 lb. low-fat ground beef
  • 1 medium chopped onion
  • 3/4 to 1 cup cooked rice
  • ketchup

Instructions

  1. Parboil the peppers until their color changes.
  2. While the peppers cook, brown the ground beef with the chopped onion until fully cooked.
  3. Add cooked rice, ketchup, and a few drops of Tabasco to the meat mixture and mix well.
  4. Drain the peppers and stuff them with the meat and rice mixture.
  5. Place the stuffed peppers in a baking dish, top each with a dollop of ketchup.
  6. Bake at 350°F for 40 minutes until heated through and slightly browned on top.
