Ingredients

  • 4 large green peppers
  • 1 Tbsp. corn oil
  • 2 Tbsp. finely chopped onion
  • 3/4 lb. ground beef
  • 1 cup fresh corn off the cob
  • 1/3 cup yellow cornmeal
  • 1/2 cup milk
  • 1 egg, beaten
  • 3/4 tsp. chili powder
  • 1/8 tsp. paprika
  • 1/4 tsp. celery salt
  • 1/2 cup fresh chopped tomato
  • 1 tsp. chopped parsley
  • 1/4 cup sweet red pepper, chopped

Instructions

  1. Cut peppers in half lengthwise and remove seeds.
  2. Partially boil the peppers for 3 minutes and set aside to cool.
  3. In a skillet, heat 1 Tbsp. corn oil and cook chopped onion until translucent.
  4. Add ground beef and cook until browned.
  5. Stir in fresh corn, yellow cornmeal, milk, beaten egg, chili powder, paprika, and celery salt; cook until mixture thickens slightly.
  6. Mix in chopped tomato, parsley, and chopped red pepper.
  7. Stuff the cooled peppers with the beef and vegetable mixture.
  8. Place stuffed peppers in a baking dish and bake at 375°F (190°C) for about 15 minutes until heated through.
