Louise'S Stuffed Peppers

Ingredients
- 4 large green peppers ⓘ
- 1 Tbsp. corn oil ⓘ
- 2 Tbsp. finely chopped onion ⓘ
- 3/4 lb. ground beef ⓘ
- 1 cup fresh corn off the cob ⓘ
- 1/3 cup yellow cornmeal ⓘ
- 1/2 cup milk ⓘ
- 1 egg, beaten ⓘ
- 3/4 tsp. chili powder
- 1/8 tsp. paprika ⓘ
- 1/4 tsp. celery salt ⓘ
- 1/2 cup fresh chopped tomato ⓘ
- 1 tsp. chopped parsley ⓘ
- 1/4 cup sweet red pepper, chopped ⓘ
Instructions
- Cut peppers in half lengthwise and remove seeds.
- Partially boil the peppers for 3 minutes and set aside to cool.
- In a skillet, heat 1 Tbsp. corn oil and cook chopped onion until translucent.
- Add ground beef and cook until browned.
- Stir in fresh corn, yellow cornmeal, milk, beaten egg, chili powder, paprika, and celery salt; cook until mixture thickens slightly.
- Mix in chopped tomato, parsley, and chopped red pepper.
- Stuff the cooled peppers with the beef and vegetable mixture.
- Place stuffed peppers in a baking dish and bake at 375°F (190°C) for about 15 minutes until heated through.
