  1. Peel the chayotes, cut them in half to remove the pits, then slice them thick and boil in water.
  2. Save the water used for boiling the chayotes.
  3. Allow the boiled chayote slices to cool.
  4. Take one slice of chayote; top with a slice of mozzarella cheese, then place another slice of chayote on top to form a mini sandwich.
  5. Squeeze the stuffed chayote slices gently with hands to drain excess liquid.
  6. Dip the stuffed chayote patties into beaten egg mixture.
  7. Fry the patties in a skillet with about half an inch of oil until golden brown.
