Ingredients

  • 1 box chicken stuffing mix
  • 6 large boneless skinless chicken breasts
  • 12 slices pepper Jack cheese
  • Pam (butter flavored)

Instructions

  1. Prepare the stuffing mix as directed on the box and set aside.
  2. Cut pockets into each chicken breast by slicing horizontally without cutting all the way through.
  3. Spray a 9 x 13-inch baking dish with butter flavored Pam.
  4. Stuff the prepared stuffing mixture into the chicken pockets.
  5. Place the stuffed chicken breasts into the prepared baking dish.
  6. Top each chicken breast with 2 slices of pepper Jack cheese.
  7. Bake at 350°F (175°C) for 20 to 30 minutes, until chicken is cooked through and cheese is melted.
