Juicy Cornish hens stuffed with flavorful rice and glazed with a rich Burgundy and currant jelly sauce, perfect for special occasions or intimate dinners.

Ingredients

  • 6 oz. wild and white rice
  • 4 or 6 Cornish hens
  • salt
  • pepper
  • 1 c. Burgundy wine
  • 1 c. currant jelly
  • 4 Tbsp. butter
  • 2 Tbsp. lemon juice
  • 4 tsp. cornstarch
  • 3 tsp. Worcestershire

Instructions

  1. Cook the wild and white rice according to the package directions.
  2. Stuff the cooked rice into the hens and lightly season with salt and pepper.
  3. In a saucepan, combine Burgundy wine and currant jelly over medium heat until the jelly melts.
  4. Add butter, lemon juice, Worcestershire sauce, and ground allspice to the sauce. Stir well.
  5. In a small bowl, mix cornstarch with a little water to make a slurry.
  6. Add the cornstarch mixture to the sauce and cook until it thickens.
  7. Place the stuffed hens in a roasting pan and roast in a preheated oven at 375°F (190°C) for about 1 hour or until cooked through.
  8. Baste the hens periodically with the sauce during roasting.
  9. Serve the hens hot, drizzled with additional sauce.
