Ingredients

  • 2 large eggplants
  • 3 large onions
  • 3 large tomatoes
  • 2 lb ground beef
  • salt
  • pepper
  • 3 Tbsp oil

Instructions

  1. Peel the eggplants and slice them into rounds.
  2. Deep fry the eggplant slices in oil until golden brown, then drain on paper towels.
  3. Chop the onions and tomatoes.
  4. In a skillet, cook the onions in oil until translucent.
  5. Add the ground beef to the skillet and cook until browned.
  6. Stir in chopped tomatoes, salt, and pepper, then simmer for a few minutes.
  7. Stuff the fried eggplant slices with the beef mixture.
  8. Place the stuffed eggplants in a baking dish, add water, cover, and bake until heated through.
