Ingredients

  • 1/2 cup oleo
  • 1/3 cup chopped onion
  • 1/2 cup finely chopped celery
  • 1 cup uncooked rice
  • 1 cup sliced ripe olives
  • 1 2/3 cups water
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 can consomme or beef bouillon
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Melt oleo in a skillet; add chopped onion and celery and sauté gently for several minutes.
  2. Add uncooked rice and stir until well coated with oleo and deep golden in color (but not brown).
  3. Add consomme or beef bouillon, water, salt, and pepper.
  4. Pour the mixture into a 2-quart casserole dish.
  5. Bake uncovered at 350°F for 45 minutes.
  6. Fold in sliced ripe olives and grated Parmesan cheese.
  7. Return to the oven and bake for an additional 5 minutes.
