Juicy fillets stuffed with sautéed onions and spinach, topped with savory spaghetti sauce, baked to perfection, and finished with melted cheese for a hearty, flavorful meal.

Ingredients

  • 2 medium onions, chopped
  • 1 Tbsp. butter or margarine
  • 2 lb. fillets, thawed
  • 1 can meatless spaghetti sauce

Instructions

  1. Cook the chopped onions in butter until tender but not brown.
  2. Spread each fillet with cooked spinach.
  3. Sprinkle the fillets with the cooked onions.
  4. Roll up the fillets and place them in a shallow, buttered baking dish.
  5. Top the rolled fillets with spaghetti sauce.
  6. Bake at 400°F for about 20 minutes, or until the fish is flaky when tested with a fork.
  7. Optional: Dust with grated cheese and broil for a minute or two to melt the cheese.
