Stuffed Pepper Wedges

Ingredients

  • 3 tsp. olive oil
  • 1 large sweet red pepper
  • 1 large sweet green pepper
  • 1 large sweet yellow pepper
  • 1 large tomato, seeded and diced
  • 1/4 cup black olives
  • 2 cloves garlic, finely chopped
  • 3 Tbsp. Parmesan cheese
  • 1 Tbsp. chopped parsley

Instructions

  1. Preheat oven to 350°F.
  2. Grease a 13 x 9 x 2-inch baking dish with 1 teaspoon of olive oil.
  3. Halve, core, and seed the peppers.
  4. Cut each pepper half into 3 lengthwise wedges.
  5. Combine the tomato, olives, garlic, 2 tablespoons of Parmesan cheese, and parsley in a small bowl.
  6. Divide the mixture among the pepper wedges.
  7. Place the pepper wedges in the prepared baking dish.
  8. Drizzle with the remaining 2 teaspoons of olive oil.
  9. Bake the peppers in the preheated oven until tender, about 30 minutes.
  10. Sprinkle with the remaining 1 tablespoon of Parmesan cheese.
  11. Bake an additional 5 minutes.
  12. Serve immediately or at room temperature.
