Ingredients

  • 8 oz. green beans, trimmed
  • 1 c. celery, sliced
  • 1 lb. fresh spinach, torn into bite-size pieces
  • 1 medium green pepper, cut into rings
  • 1 medium yellow pepper, cut into rings
  • 1 small onion, thinly sliced
  • 4 Tbsp. Parmesan cheese, grated
  • 5 Tbsp. Italian dressing
  • 1/2 tsp. salt
  • 1/4 tsp. dried oregano leaves or dill
  • fresh ground black pepper to taste

Instructions

  1. Blanch green beans in boiling water for 5 minutes, until tender-crisp.
  2. Rinse green beans under cold water and drain.
  3. Rinse spinach thoroughly and drain.
  4. Tear spinach into bite-size pieces.
  5. In a large bowl, toss all ingredients together until well blended.
