Stuffed Pita

Ingredients

  • 2 (6-inch) whole wheat pita bread rounds
  • vegetable cooking spray
  • 1 Tbsp. diced onion
  • 1 Tbsp. diced green pepper
  • 1/4 c. diced lean cooked ham
  • 2 eggs, beaten
  • 1/2 c. (2 oz.) shredded low-fat Swiss cheese
  • 8 tomato slices

Instructions

  1. Cut pita bread in half. Seal in aluminum foil and heat in oven at 350° for 5 minutes. Remove from oven and keep warm.
  2. Coat a nonstick skillet with cooking spray.
  3. Place over medium-high heat until hot.
  4. Add onion and green pepper; saute until vegetables are tender. Stir in ham and cook until thoroughly heated. Add eggs and cook, stirring frequently, until eggs are set.
  5. Stir in shredded Swiss cheese; remove from heat.
  6. Place 2 tomato slices inside each pita half. Fill with 1/4 cup egg mixture.
