Ingredients

  • 4 to 5 lb. pork roast
  • 1 large onion
  • 1 Tbsp. minced garlic
  • 1 tsp. parsley flakes
  • 1/4 tsp. sweet basil (optional)
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 cup cream of chicken soup
  • 3 Tbsp. McCormick brown gravy mix

Instructions

  1. Mix diced onion, minced garlic, parsley flakes, basil (if using), salt, and black pepper to create the seasoning.
  2. Wash the pork roast and cut several 2-inch slits at an angle into the meat, being careful not to cut all the way through.
  3. Stuff as much seasoning as possible into each slit.
  4. Pour the remaining seasoning mixture over the roast.
  5. Place the roast in a roasting pan.
  6. Add 1 cup of water to the pan.
  7. Cover and bake at 375°F for 1 hour.
  8. Combine cream of chicken soup with the gravy mix dissolved in 1/2 cup cold water, then add to the roasting pan.
  9. Stir the gravy mixture every 5 minutes until well blended.
  10. Continue baking for another 30 minutes to 1 hour until the roast is thoroughly cooked and tender.
