Ingredients

  • 8 to 10 medium potatoes
  • 4 Tbsp. chopped scallions
  • parsley
  • 1 can cream of chicken soup
  • 1 pt. sour cream
  • 1 cup sharp Cheddar cheese, grated
  • 1 stick margarine or butter

Instructions

  1. Boil potatoes with skins on until done.
  2. Set aside to cool. Peel potatoes, then grate.
  3. Chop scallions and add to potatoes. Sprinkle with parsley.
  4. In a saucepan, combine cream of chicken soup, sour cream, grated Cheddar cheese, and a stick of margarine or butter.
  5. Heat until the butter or margarine melts and the mixture is smooth.
  6. Pour the sauce over the grated potatoes.
  7. Mix well to combine.
  8. Transfer to a baking dish and bake at 350°F (175°C) for 1 hour.
