Ingredients

  • 10 medium potatoes
  • sausage, uncooked
  • 1 can tomatoes
  • 1 can tomato sauce
  • 2 cups cooked mixed vegetables
  • 1 medium chopped onion
  • 1/2 cup chopped bell pepper
  • garlic to taste
  • salt to taste

Instructions

  1. Peel the potatoes and cut out or spiral the centers.
  2. Stuff the potato centers with uncooked sausage.
  3. Place the stuffed potatoes in a casserole dish.
  4. In a bowl, mix canned tomatoes, tomato sauce, cooked mixed vegetables, chopped onion, chopped bell pepper, garlic, salt, and pepper.
  5. Pour the vegetable and tomato mixture over the stuffed potatoes in the dish.
  6. Bake at 350°F for 45 minutes or until the potatoes are tender and the sausage is cooked through.
  7. Cover the dish while baking.
