Ingredients

  • 1 package large shells
  • 16 oz ricotta cheese
  • 1/4 lb shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese
  • 2 eggs
  • 1/4 cup chopped parsley
  • 1/2 teaspoon salt
  • 1 large jar meatless spaghetti sauce

Instructions

  1. Prepare the large shells according to the package directions.
  2. Drain some water, leaving the shells in warm water to keep them moist.
  3. Mix ricotta cheese, shredded mozzarella, grated Parmesan, beaten eggs, chopped parsley, and salt in a bowl.
  4. Remove one shell at a time from the warm water.
  5. Stuff each shell with the cheese mixture using a tablespoon.
  6. Pour half of the spaghetti sauce into a shallow casserole dish.
  7. Arrange the stuffed shells in the casserole dish.
  8. Pour the remaining sauce over the shells.
  9. Cover the casserole and bake at 375°F (190°C) for 30 minutes or until heated through.
