Ingredients

  • 1/3 cup black olives
  • 4 slices bacon
  • 2 tablespoons chopped onion
  • 4 hard-boiled eggs
  • 1 cup chopped celery
  • 1/3 cup mayonnaise
  • 1/2 teaspoon salt
  • dash of pepper
  • 6 ripe tomatoes

Instructions

  1. Cut olives into large pieces.
  2. Cut bacon into 1/4-inch strips and cook slowly until crisp.
  3. When bacon is half done, add chopped onion and cook until soft.
  4. Drain off excess fat.
  5. Combine cooked bacon and onion with diced eggs, chopped celery, and olives.
  6. Add mayonnaise and mix well.
  7. Stuff the mixture into ripe tomatoes.
  8. Serve on a bed of lettuce.
