Creamy and hearty, Sue's Corn Chowder combines smoky bacon, tender potatoes, and sweet corn for a comforting meal perfect for family dinners or cozy gatherings.

Ingredients

  • 8 slices bacon
  • 1 medium onion
  • 3 medium potatoes, peeled and cubed
  • 1/2 cup water
  • 2 1/4 cups milk
  • 1 can cream-style corn
  • 1/2 teaspoon salt
  • Black pepper to taste

Instructions

  1. Fry bacon in a Dutch oven until crisp.
  2. Remove bacon and reserve 3 tablespoons of drippings in the Dutch oven.
  3. Crumble bacon and set aside.
  4. Saute onion in the reserved drippings until tender.
  5. Add potatoes and water to the Dutch oven.
  6. Cover and simmer for 15 to 20 minutes or until potatoes are done.
  7. Stir in milk, cream-style corn, salt, and black pepper.
  8. Cook over medium heat, stirring frequently until heated through.
  9. Serve the chowder topped with crumbled bacon.
