Ingredients

  • 3/4 cup boiling water
  • 1 envelope sugar-free jello (raspberry)
  • 1 apple, washed, cored and diced (skin and all)
  • 1 cup raw cranberries
  • 1/2 teaspoon lemon juice (optional)
  • 2 ribs celery, finely chopped

Instructions

  1. Put cranberries and apple in blender with jello.
  2. Blend well until berries and apples are very fine.
  3. Pour mixture into a bowl.
  4. Add finely chopped celery to the mixture (adds texture).
  5. Do not blend celery with berries and apples.
  6. Serve chilled. Good with fowl.

Tips & Substitutions

For a smoother texture, ensure the cranberries are fresh and not frozen. You can substitute the raspberry jello with another sugar-free flavor like strawberry or cherry to vary the taste. If you want a bit of sweetness without sugar, consider adding a few drops of stevia or monk fruit sweetener. This dish can also be enhanced with a pinch of cinnamon for added warmth.

Serving Suggestions

Serve this vibrant dish chilled as a refreshing side with poultry dishes, especially fowl, or as a light dessert. It pairs beautifully with Pickled Mirliton for a unique flavor combination. Consider serving it alongside a simple green salad or whole-grain crackers for a well-rounded meal.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator, where they will keep for up to 3 days. To serve chilled, simply take it out of the fridge about 10-15 minutes before serving. This dish doesn't freeze well, as the texture may change after thawing.

Frequently Asked Questions

Can I use frozen cranberries instead of fresh?

While fresh cranberries are recommended for the best texture and flavor, you can use frozen cranberries in a pinch. Just be sure to thaw and drain any excess moisture before blending to achieve the desired consistency.

How can I make this recipe vegan?

This recipe is already vegan-friendly as it contains no animal products. Just ensure that the sugar-free jello you choose is also vegan-certified, as some brands may use gelatin derived from animal sources.

Is there a way to add more sweetness without sugar?

Yes! You can add natural sweeteners like honey or agave syrup if you're not strictly avoiding sugars. Alternatively, use sugar-free sweeteners like erythritol or stevia to enhance sweetness without added calories.
