- Core the red pepper and cut into strips about 1/2-inch wide and 2-inches long.
- Heat olive oil in a heavy, medium pan over medium heat.
- Add pepper strips and sauté until nearly tender, about 4 or 5 minutes.
- Add sugar snap peas, minced garlic, and dried thyme; toss over heat for a few seconds.
- Add water and cook, tightly covered, over medium-low heat, stirring occasionally, until peas are tender-crisp, about 3 minutes.
- If excess water remains in the pan, uncover and cook until it evaporates.
- Season to taste with salt and pepper.
- Serve immediately.
