Ingredients

  • 1 sweet red pepper
  • 1 Tbsp. olive oil
  • 1/2 lb. sugar snap peas, rinsed and ends and string removed
  • 1/2 tsp. dried thyme
  • 2 large cloves garlic, minced
  • 2 Tbsp. water
  • salt and pepper

Instructions

  1. Core the red pepper and cut into strips about 1/2-inch wide and 2-inches long.
  2. Heat olive oil in a heavy, medium pan over medium heat.
  3. Add pepper strips and sauté until nearly tender, about 4 or 5 minutes.
  4. Add sugar snap peas, minced garlic, and dried thyme; toss over heat for a few seconds.
  5. Add water and cook, tightly covered, over medium-low heat, stirring occasionally, until peas are tender-crisp, about 3 minutes.
  6. If excess water remains in the pan, uncover and cook until it evaporates.
  7. Season to taste with salt and pepper.
  8. Serve immediately.
