Ingredients

  • 1 1/2 cups raspberries
  • 1 1/2 cups sliced strawberries
  • 1 cup blueberries
  • 1 (9-inch) baked pie shell
  • 3/4 cup sugar
  • 3 tablespoons cornstarch
  • 1 1/2 cups water
  • 1 package strawberry Jell-O (4 servings)
  • 8 ounces Cool Whip nonfat topping

Instructions

  1. Mix all berries in a large bowl.
  2. Pour the berries into the baked pie shell.
  3. In a medium saucepan, combine sugar and cornstarch.
  4. Gradually stir in water until the mixture is smooth.
  5. Cook over medium heat, stirring constantly, until the mixture comes to a boiling point.
  6. Boil for 1 minute.
  7. Remove from heat and stir in the strawberry Jell-O until dissolved.
  8. Allow the mixture to cool to room temperature.
  9. Pour the cooled gelatin mixture over the berries in the pie shell.
  10. Refrigerate for 3 hours or until set.
  11. Serve with Cool Whip nonfat topping.
