Ingredients

  • 2 lb. all-purpose potatoes
  • 1/2 c. mayonnaise
  • 1/2 c. sour cream
  • 1 Tbsp. horseradish
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 4 hard-boiled eggs
  • 3 bacon slices
  • 2 green onions

Instructions

  1. Peel the potatoes; place in a large saucepan in salted water and cook until tender.
  2. Drain and cool completely.
  3. Cut into 1-inch cubes.
  4. In a large bowl, mix mayonnaise, sour cream, horseradish, salt, and pepper until smooth.
  5. Stir in the potatoes, chopped hard-boiled eggs, crumbled bacon, and chopped green onions.
  6. Mix well and serve.
