Ingredients

  • 1 small package Jell-O
  • vanilla wafers
  • melted butter
  • 1 small can evaporated milk, chilled
  • 1 small can crushed pineapple

Instructions

  1. Prepare Jell-O according to package directions and chill.
  2. Crush vanilla wafers to make about 3/4 cup and mix with about 3 tablespoons melted butter.
  3. Press the wafer mixture into the bottom of a pie pan to form the crust.
  4. Stand whole vanilla wafers around the edges of the crust.
  5. With an electric mixer, whip the chilled Jell-O until it begins to thicken.
  6. Whip the chilled evaporated milk until it is slightly thickened, then fold it into the Jell-O.
  7. Add crushed pineapple to the mixture and pour into the prepared pie shell.
  8. Chill the assembled pie until set before serving.
