Sunburst Yams feature sweet, creamy yams baked inside orange shells, accented with toasted coconut, mint, and cherries, offering a vibrant and flavorful side perfect for festive occasions.

Ingredients

  • 3 large oranges
  • 2 (16 oz.) cans yams, drained
  • 1/3 cup brown sugar
  • 1/4 cup melted butter
  • toasted coconut
  • mint sprigs
  • maraschino cherries

Instructions

  1. Halve the oranges and squeeze out the juice, reserving 1/4 cup of juice.
  2. Remove the pulp from the orange halves.
  3. Beat the drained yams until smooth.
  4. Beat in the orange juice, brown sugar, and 3 tablespoons of melted butter.
  5. Spoon the yam mixture into the orange shells.
  6. Brush the edges of the oranges with the remaining melted butter.
  7. Bake at 350°F for 20 to 30 minutes until heated through.
  8. Garnish with toasted coconut, mint sprigs, and maraschino cherries.
