Ingredients

  • 1 can cream of mushroom soup (undiluted)
  • 1 can cream of celery soup
  • 1 can cream of chicken soup
  • 1/3 cup butter or oleo, melted
  • 1 1/4 cups quick cooking rice
  • 1 chicken (3 to 4 lb.), cut in pieces or 6 to 8 breast pieces
  • salt and pepper to taste

Instructions

  1. Combine the undiluted cream of mushroom, cream of celery, and cream of chicken soups with 1/4 cup melted butter or oleo and the quick cooking rice.
  2. Pour the mixture into a greased 13 x 9 x 2-inch dish.
  3. Place the chicken pieces over the rice mixture.
  4. Brush the chicken with the remaining melted butter or oleo.
  5. Season with salt and pepper to taste.
  6. Cover the dish with foil and bake at 275°F (135°C) for 2 1/2 hours.
