Ingredients

  • 8 eggs, separated
  • 2 cups sugar
  • 1 3/4 cups sifted cake flour
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla
  • 1 teaspoon lemon or orange flavoring
  • 2/3 cup water

Instructions

  1. Beat cream of tartar, salt, vanilla, and lemon or orange flavoring with egg whites until stiff.
  2. Slowly beat in 1 cup of sugar into the egg whites.
  3. Set aside the beaten egg whites.
  4. Beat egg yolks until quite light in color.
  5. Slowly beat in the remaining sugar into the egg yolks.
  6. Blend sifted cake flour alternately with water into the egg yolk mixture.
  7. Fold the flour and water mixture into the beaten egg white mixture with a large spoon.
  8. Pour the batter into an ungreased tube pan.
  9. Bake in the center of the oven at 325°F for 60 minutes.
  10. Then turn the oven to 350°F and bake for an additional 20 minutes.
  11. Remove from oven and invert the pan onto a cake rack to cool.
