- Beat cream of tartar, salt, vanilla, and lemon or orange flavoring with egg whites until stiff.
- Slowly beat in 1 cup of sugar into the egg whites.
- Set aside the beaten egg whites.
- Beat egg yolks until quite light in color.
- Slowly beat in the remaining sugar into the egg yolks.
- Blend sifted cake flour alternately with water into the egg yolk mixture.
- Fold the flour and water mixture into the beaten egg white mixture with a large spoon.
- Pour the batter into an ungreased tube pan.
- Bake in the center of the oven at 325°F for 60 minutes.
- Then turn the oven to 350°F and bake for an additional 20 minutes.
- Remove from oven and invert the pan onto a cake rack to cool.
