Sunshine Jello

- Dissolve the lemon Jell-O in 2 cups hot water, then add juice from the crushed pineapple to make 2 cups of cold water and pour into the Jell-O.
- Stir in the crushed pineapple until well mixed.
- While still warm, spread a layer of miniature marshmallows over the Jell-O and let it set.
- Once set, whip the whipping cream until stiff peaks form.
- Fold the mayonnaise into the whipped cream and layer it on top of the Jell-O.
- Grate cheese finely and sprinkle lightly over the top as a garnish.
