A bright, creamy lemon-flavored jello salad with pineapple, marshmallows, and a savory topping of mayonnaise and grated cheese, perfect for potlucks and festive gatherings.

Ingredients

  • 2 pkg. lemon Jell-O
  • miniature marshmallows
  • 1/2 cup mayonnaise
  • 2 (No. 2) cans crushed pineapple
  • 1/2 pint whipping cream
  • grated cheese

Instructions

  1. Dissolve the lemon Jell-O in 2 cups hot water, then add juice from the crushed pineapple to make 2 cups of cold water and pour into the Jell-O.
  2. Stir in the crushed pineapple until well mixed.
  3. While still warm, spread a layer of miniature marshmallows over the Jell-O and let it set.
  4. Once set, whip the whipping cream until stiff peaks form.
  5. Fold the mayonnaise into the whipped cream and layer it on top of the Jell-O.
  6. Grate cheese finely and sprinkle lightly over the top as a garnish.
