Sunshine Loaf is a moist, fruity cake blending cream cheese, pears, pineapple, and lemon peel for a bright, indulgent treat suitable for brunch or dessert gatherings.

Ingredients

  • 6 oz. cream cheese
  • 4 eggs
  • 1 jar Gerber junior pears and pineapple
  • 1 package yellow cake mix
  • 1 cup flour

Instructions

  1. Preheat oven to 350°F.
  2. Grease well and flour a 9 x 5 x 3-inch loaf pan.
  3. Blend cream cheese in a bowl until smooth.
  4. Add eggs one at a time, beating after each addition.
  5. Mix in the jar of Gerber junior pears and pineapple.
  6. Add the yellow cake mix, flour, and candied lemon peel; mix just until dry ingredients are moistened.
  7. Pour the batter into the prepared loaf pan.
  8. Bake at 350°F for 50 minutes.
  9. Remove from oven and let stand for 10 minutes before removing from pan.
