Super Duper Rolls are soft, fluffy, and slightly sweet bread rolls with rich potato flavor, perfect for family dinners, special occasions, or as a comforting snack.

Ingredients

  • 1 pkg. yeast
  • 1/4 cup water
  • 2/3 cup shortening
  • 1 cup hot potato water
  • 2/3 cup sugar
  • 2 tsp. salt
  • 1 cup hot mashed potatoes
  • 3 well-beaten eggs

Instructions

  1. Dissolve yeast in 1/4 cup water.
  2. Stir in shortening, hot potato water, sugar, and salt until dissolved, then cool to lukewarm.
  3. Add eggs and 2 cups of flour; mix until smooth.
  4. Gradually add 6 to 7 cups of flour and knead until smooth.
  5. Let the dough rise until doubled in size.
  6. Shape the dough into rolls and let rise again.
  7. Bake at 400°F for 12 to 15 minutes.
