Ingredients

  • 1/2 (1 lb.) package Creamettes lasagna (uncooked)
  • 2 (26 oz.) jars tomato and basil or onion and garlic pasta sauce
  • 1 (15 or 16 oz.) container Ricotta cheese or cottage cheese
  • 1 (10 oz.) package frozen chopped spinach, thawed and well drained
  • 1 lb. shredded Mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 2 eggs, beaten

Instructions

  1. Prepare the Creamettes lasagna according to package directions; drain.
  2. In a medium bowl, combine Ricotta cheese, thawed and well-drained chopped spinach, half of the shredded Mozzarella cheese, Parmesan cheese, and beaten eggs; mix well.
  3. In a 15 x 9-inch baking dish, layer 2 cups of pasta sauce, half of the cooked lasagna, remaining sauce, all of the spinach mixture, half of the remaining Mozzarella cheese, remaining lasagna, and sauce.
  4. Cover the dish and bake in a 350°F oven until bubbly, about 45 minutes.
  5. Uncover and top with the remaining Mozzarella cheese and parsley. Bake for an additional 15 minutes.
  6. Let stand for 10 minutes before serving.
