Ingredients

  • 2 Tbsp. soft shortening
  • 3/4 c. sugar
  • 4 egg yolks or 2 whole eggs
  • 4 tsp. baking powder
  • 1 1/4 tsp. salt
  • 1/2 tsp. nutmeg
  • 1/2 tsp. mace
  • 1 c. milk

Instructions

  1. Mix together the soft shortening, sugar, and egg yolks or whole eggs.
  2. Sift dry ingredients—baking powder, salt, nutmeg, and mace—together.
  3. Add the dry ingredients to the creamed mixture gradually, alternating with milk, mixing until the dough is soft.
  4. Rub flour thoroughly into a heavy canvas cloth to prevent sticking.
  5. Turn dough onto the floured cloth, then fold the four corners over the dough to lightly coat it with flour.
  6. Handle the dough as little as possible and roll it to a thickness of 3/4 inch.
  7. Let the rolled dough stand for 15 minutes before cutting to make doughnuts easier to handle.
  8. Cut out doughnuts using a floured 2 1/2-inch or 3-inch doughnut cutter.
  9. Fry the doughnuts in hot fat at 375°F until brown, turning when the first crack appears, taking about 1 1/2 minutes per side.
  10. Drain the fried doughnuts on absorbent paper.
