Ingredients

  • 6 oz. dried apricots
  • 3 oz. dried apples
  • 3 oz. dried peaches
  • 3 1/2 oz. prunes
  • 2 1/2 oz. dark seedless raisins

Instructions

  1. Rinse the dried fruits well in cold water.
  2. Remove pits from prunes with a sharp knife.
  3. Place the fruits into a large saucepot with a tight-fitting cover.
  4. Add 2 quarts of water to the pot.
  5. Cover and soak the fruits for 2 to 3 hours.
  6. Add 1/4 cup sugar, 3 tablespoons tapioca, a 3-inch piece of cinnamon stick, and 1 teaspoon grated orange peel.
  7. Bring the mixture to a boil, then reduce heat, cover, and simmer for about 1 hour or until the fruit is tender.
  8. Remove from heat and stir in 1 cup of red raspberry fruit syrup.
  9. Chill the soup in the refrigerator.
  10. Serve with whipped cream and optional slivered blanched almonds.
  11. The recipe can be made without raisins.
