Swedish Fruit Soup(Fruktsoppa)
A comforting Swedish fruit soup featuring dried apricots, apples, peaches, and prunes, enhanced with cinnamon and orange peel, perfect for a cozy, fruity dessert or light meal.

- Rinse the dried fruits well in cold water.
- Remove pits from prunes with a sharp knife.
- Place the fruits into a large saucepot with a tight-fitting cover.
- Add 2 quarts of water to the pot.
- Cover and soak the fruits for 2 to 3 hours.
- Add 1/4 cup sugar, 3 tablespoons tapioca, a 3-inch piece of cinnamon stick, and 1 teaspoon grated orange peel.
- Bring the mixture to a boil, then reduce heat, cover, and simmer for about 1 hour or until the fruit is tender.
- Remove from heat and stir in 1 cup of red raspberry fruit syrup.
- Chill the soup in the refrigerator.
- Serve with whipped cream and optional slivered blanched almonds.
- The recipe can be made without raisins.
