Delicious Swedish oatmeal cookies with a crunchy exterior and chewy center, featuring hints of vanilla and brown sugar, perfect for tea or as a comforting treat.

Ingredients

  • 3/4 cup flour
  • 1/2 teaspoon soda
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup shortening
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 1/2 cups quick oatmeal

Instructions

  1. Sift together flour, soda, and salt; set aside.
  2. Cream together sugar, shortening, and brown sugar.
  3. Blend in egg and vanilla; mix well.
  4. Add flour mixture and mix until combined.
  5. Add oatmeal and mix well.
  6. Drop spoonfuls of dough onto a cookie sheet in mounds.
  7. Bake at 350°F (175°C) for 8 minutes.
  8. Remove from oven and place 1/2 teaspoon of topping in the center of each cookie; pressing lightly.
  9. Bake for another 6-8 minutes until cookies are golden brown.
  10. Cool for 1 minute before removing from the cookie sheet.
