Ingredients

  • 10 lb cucumbers
  • alum
  • 2 heaping Tbsp ginger
  • 5 1/2 lb sugar
  • 1/2 gal vinegar
  • 1 Tbsp spices

Instructions

  1. Soak the cucumbers in brine for 10 days. Take out and cut in 1/4-inch slices.
  2. Soak in alum water (2 tablespoons alum to 1 gallon water) for 24 hours. Dry off on cloth.
  3. Boil in ginger tea (2 heaping tablespoons ginger to 1 gallon water) for 1 hour.
  4. Take out and boil in syrup (sugar, 1 teaspoon alum, vinegar, and spices tied in a thin cloth) for 3 to 5 minutes until clear.
