Ingredients

  • 1 onion, chopped fine
  • 3 Tbsp. cooking oil
  • 3 Tbsp. all-purpose flour
  • 3 cans small peas
  • 1 tsp. sugar
  • 1 to 2 potatoes, cut up

Instructions

  1. Put oil and flour in a pot to make a roux; brown the roux.
  2. Add chopped onions and cook until they are clear.
  3. Add peas with water to the pot.
  4. Fill each of the three cans of peas three-quarters full with water, add 1 teaspoon sugar to each, stir well, and add to the pot.
  5. When the gravy starts to thicken, add the potatoes.
  6. Lower the heat and cook until the potatoes are tender, adding more water if necessary.
  7. Serve hot over rice.
