Sweet Potato Scallop features tender sweet potatoes layered with tart apples, coated in a rich caramelized cinnamon butter sauce, perfect as a comforting side dish or holiday treat.

Ingredients

  • 12 small sweet potatoes
  • 3 large Granny Smith apples
  • 1 1/2 sticks butter or margarine
  • 1 cup packed light brown sugar
  • 1/2 cup Karo syrup
  • 1 teaspoon cinnamon

Instructions

  1. Boil the sweet potatoes until tender, then cool and peel.
  2. Cut the sweet potatoes into small slices.
  3. Core and pare the Granny Smith apples.
  4. Quarter the apples and slice them thin.
  5. Layer the sweet potato slices and apple slices in a casserole dish alternately.
  6. In a saucepan, melt the butter or margarine and add the light brown sugar, Karo syrup, and cinnamon to make a candied sauce.
  7. Bring the sauce to a boil and cook until thickened.
  8. Pour the thickened sauce over the layered casserole.
  9. Bake until the apples are soft and the glaze is bubbly.
