Ingredients

  • 1 c. sliced bell peppers
  • 8 c. sliced yellow squash
  • 2 c. sliced onions
  • 2 Tbsp. salt
  • 1 c. apple cider vinegar
  • 1 tsp. celery seed
  • 1 3/4 c. sugar

Instructions

  1. Mix sliced bell peppers, yellow squash, onions, and salt and set aside for 2 hours with ice on top of the mixture.
  2. In a large stockpot, combine apple cider vinegar, celery seed, sugar, and turmeric. Bring to a boil.
  3. Drain the mixture of peppers, squash, onions, and salt.
  4. Add the drained mixture to the boiling vinegar mixture.
  5. Bring the mixture to a boil again.
  6. Pour the hot mixture into clean, dry, warm jars and seal.
