Sweet Tator Muffins

Ingredients

  • 1 3/4 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 c. packed brown sugar
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/8 tsp. cloves
  • 3/4 c. skim milk
  • 1/2 c. mashed cooked sweet tators
  • 3 Tbsp.???
  • 1 egg, lightly beaten
  • 1/2 tsp. vanilla

Instructions

  1. Combine first seven ingredients in a bowl.
  2. Combine milk and next four ingredients and add to dry mixture.
  3. Stir until moistened.
  4. Add raisins.
  5. Spoon batter into muffin pans coated with Pam, 1/2 full.
  6. Bake at 400° for 25 minutes.
  7. Check doneness by placing toothpick in center of muffin until toothpick dry.
  8. Remove from pans immediately.
  9. Makes 1 dozen.
