Ingredients

  • 3 to 3 1/4 cups all-purpose flour
  • 3 oz Swiss cheese, grated
  • 1 packet RapidRise yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 3/4 cup evaporated skim milk
  • 1/4 cup water
  • 1 tablespoon butter
  • 1 egg white, beaten
  • dill seed (optional)

Instructions

  1. In a large mixing bowl, combine 2 cups of flour, Swiss cheese, yeast, sugar, salt, and dill seed.
  2. Heat evaporated skim milk, water, and butter in a saucepan over medium-low heat to 125°F.
  3. Stir the heated mixture into the dry ingredients and blend well.
  4. Continue adding flour to make a soft dough.
  5. Knead the dough for 4 minutes until smooth and elastic.
  6. Cover and let rest for 10 minutes.
  7. Roll out the dough into a 12 x 8-inch rectangle.
  8. Roll up from the short end of the loaf, sealing the ends and seams.
  9. Place in a greased 8 x 4 x 2 1/2-inch loaf pan, then cover.
  10. Set a large shallow pan filled halfway with boiling water on the counter.
  11. Place the loaf on a rack over the boiling water and let it rise until double in size, about 30 minutes.
  12. Make 4 diagonal slashes in the top of the loaf.
  13. Brush the loaf with beaten egg white and sprinkle with dill seed.
  14. Bake at 375°F for 25 minutes.

Tips & Substitutions

For a richer flavor, experiment with adding herbs like rosemary or thyme alongside the dill seed. If you don't have evaporated skim milk, you can substitute with regular milk mixed with a bit of cream. Ensure your water and milk mixture is not too hot to avoid killing the yeast. Kneading the dough adequately is key to achieving a great texture.

Serving Suggestions

This Swiss Dill Loaf is perfect as a standalone snack or served with a spread of butter. It pairs beautifully with a fresh salad, such as Sweetheart Fruit Salad, or as a side to soups and stews. Storage & Reheating

To store leftovers, wrap the Swiss Dill Loaf tightly in plastic wrap or aluminum foil and keep it at room temperature for up to three days. For longer storage, slice and freeze the loaf. To reheat, preheat your oven to 350°F and warm the slices on a baking sheet for about 10 minutes until heated through.

Frequently Asked Questions

Can I use a different type of cheese?

Yes, you can substitute Swiss cheese with Gruyère or even cheddar for a different flavor profile. If using a stronger cheese, adjust the quantity to maintain balance in the loaf.

What can I do if my dough doesn't rise?

If your dough doesn't rise, check that your yeast is fresh and that the liquid was at the correct temperature. If it’s too cold or too hot, the yeast may not activate properly. You can also try placing the dough in a warmer area to encourage rising.

How can I enhance the flavor of the loaf?

To enhance the flavor, consider adding minced garlic or onion powder to the dry ingredients. You can also mix in some chopped fresh dill for a more pronounced dill flavor that complements the Swiss cheese beautifully.
