Swiss Eggplant

Ingredients

  • 1 medium large onion
  • 1 small eggplant
  • 1 zucchini
  • 1 lb. string beans
  • 1 lb. fresh peas or limas
  • 1 lb. tomatoes
  • fresh dill
  • fresh mint
  • 1 tsp. sugar
  • 1/2 c. olive oil
  • 3 Tbsp. butter
  • 4 slices Swiss cheese
  • salt and pepper
  • garlic powder

Instructions

  1. Saute zucchini, eggplant and onion in oil and butter.
  2. Add fresh vegetables, dill, mint and rest of ingredients.
  3. Lay 4 slices of Swiss cheese on top.
  4. Cover and cook on low until tender.
