Ingredients

  • 2 1/2 to 3 lb veal roast
  • 1 (7 1/2 oz) can tomatoes, cut up
  • 3/4 cup diced cooked ham
  • 2 tablespoons dry white wine
  • 2 tablespoons cornstarch

Instructions

  1. Place meat, fat side up, on a rack in a shallow roasting pan.
  2. Roast in a 325°F oven for 1 3/4 hours (105 minutes).
  3. Remove meat to a platter and skim fat from pan juices.
  4. Add undrained tomatoes, diced cooked ham, white wine, and a dash of pepper to the pan juices.
  5. Combine cornstarch and 1/2 cup cold water; stir into the tomato mixture.
  6. Cook and stir until thick and bubbly.
  7. Cook and stir for 2 minutes more.
  8. Add cheese and stir until melted.
  9. Serve the sauce with the meat.
