Instructions
- Place meat, fat side up, on a rack in a shallow roasting pan.
- Roast in a 325°F oven for 1 3/4 hours (105 minutes).
- Remove meat to a platter and skim fat from pan juices.
- Add undrained tomatoes, diced cooked ham, white wine, and a dash of pepper to the pan juices.
- Combine cornstarch and 1/2 cup cold water; stir into the tomato mixture.
- Cook and stir until thick and bubbly.
- Cook and stir for 2 minutes more.
- Add cheese and stir until melted.
- Serve the sauce with the meat.
