Ingredients

  • 6 veal or pork cutlets (5 oz. each)
  • 1/3 cup flour
  • 1 teaspoon Season-All
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon nutmeg
  • 2 eggs
  • 2 tablespoons water
  • 1 cup fine bread crumbs
  • 1/2 cup butter
  • 1 tablespoon parsley
  • 2 tablespoons lemon juice

Instructions

  1. Pound veal or pork cutlets until 1/4 inch thick.
  2. Dredge the cutlets with a mixture of flour, Season-All, black pepper, and nutmeg.
  3. Dip the coated cutlets into a mixture of beaten eggs and water, then into bread crumbs.
  4. Let the breaded cutlets dry for 30 minutes.
  5. Brown the cutlets on both sides in 1/2 cup of butter, cooking about 15 minutes.
  6. Remove veal to a hot platter and serve.
