Ingredients

  • 3/4 cup hot water
  • 1/2 cup sugar cane syrup or molasses
  • 1/4 cup milk
  • 2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 3/4 cup sugar
  • 3 teaspoons baking powder
  • 1 1/2 cups coarsely chopped pecans, roasted
  • 1 teaspoon salt
  • 1 teaspoon baking soda

Instructions

  1. In a medium bowl, combine hot water and sugar cane syrup or molasses, stirring until well blended.
  2. Stir in milk until blended.
  3. In a large bowl, mix whole wheat flour, all-purpose flour, sugar, baking powder, salt, and baking soda.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the roasted, coarsely chopped pecans.
  6. Pour the batter into greased or lined muffin tins.
  7. Bake at 375°F (190°C) for about 20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow muffins to cool slightly before serving.
