Ingredients

  • 1 cup medium cracked wheat
  • 1 bunch green onions, diced
  • 1 bunch parsley, diced
  • 3 tomatoes, diced
  • 1 lb can chickpeas, drained
  • Juice of 2 large lemons
  • 1/2 cup olive oil
  • Salt and pepper to taste
  • 1 tablespoon dried mint or 1/2 cup fresh mint
  • 2 cloves garlic, crushed

Instructions

  1. Soak cracked wheat in warm water for 30 minutes.
  2. Drain the wheat and add the remaining ingredients: diced green onions, parsley, tomatoes, drained chickpeas, lemon juice, olive oil, crushed garlic, dried or fresh mint, salt, and pepper.
  3. Let the mixture stand for 1 hour before serving.
